Chicken liver patè

Ingredients (Serves 4-5)
500 g chicken livers and hearts 1 red onion 2-3 sage leaves 4 nr fillets of anchovies 80 gr capers 80 g butter Extra virgin olive oil Dry white wine or vinsanto Salt and pepper
Method
Sauté the onion and sage in oil and little butter until soft, add livers and hearts and cook them on high heat until brown. Pour some white wine and let it evaporate Season with pepper and cook for about 10’ adding water if needed Remove from heat, add the remaining butter, anchovies, capers and Vin Santo blend with hand blender till you obtain a nice and creamy consistency Adjust the seasoning, spread the paté ( warm or room temperature) on roasted slices of bread
