Ingredients ( 5 portions)
500 gr Mascarpone 300 gr savoiardi biscuits or lady fingers 5 table spoons of sugar 5 eggs 1 cups of coffee Cocoa powder
Method
Separate the whites from the yolks, use two different bowls and remember that none of the yolk should get mixed with the egg white; otherwise the egg whites won't whisk properly.
Beat the whites till they are stiff, you can use an electrical whisk, or you can just use all of your power and beat by hand.
Then mix the yolks with the sugar gradually and whisk until the egg yolks become thick, creamy, and light yellow, add the mascarpone cheese till is dissolved completely, the cream will be pale yellow Fold the whites into the yolk sugar and mascarpone preparation and mix until there are no lumps.
For the assembling
Dip the biscuits in the coffee and place them in the base of the cup, add some cream and repeat this process to create layers of biscuits and cream, the last layer should be a layer of cream
Refrigerate and when you take it out of the fridge add the cocoa powder.
